Trout from Clear Springs

Pure mountain spring water is the secret to the
great-tasting, fresh Rainbow trout featured at The Fish Market. We recently
visited the Clear Springs farm, located on the Snake River Canyon of southern
Idaho's Magic Valley, to get a closer look at the world’s premier
producer of Rainbow trout.
Clear Springs' ideal location is the product of the pristine water from the
Snake River Aquifer, which is considered one of the most productive aquifers
in the country. The water from the underground springs bursts from the canyon
walls in this region of the river, flowing through the farm, and is then
released into the river below the farm. The water flows at a constant rate
and cold temperature throughout the year, making it perfect for raising
Rainbow trout.
We have Rainbow trout on The Fish Market menu year round. It has a mild flavor
and delicate texture, and is delicious simply grilled over mesquite charcoal.
We also smoke the same fish ourselves and offer this as an appetizer on
the menu. In addition, we periodically feature a cashew crusted fillet,
pan fried and topped a black bean, corn and avocado relish. Call the restaurant
