We love talking about, and our guests love ordering, the big three Pacific finfish of peak season summertime; namely, halibut, King salmon and swordfish. However, part of being a serious fish market means offering more unheralded and unique species from local or otherwise well-managed fisheries. Two great examples of west coast finfish at the height of their season are white sea bass and sablefish.
Although called by this name white sea bass is neither a sea bass nor white in color. It is a largest member of the croaker family that is primarily fished from the Channel Islands of Southern California to the Baja California peninsula. The flesh of white sea bass is firm and dense, but with a moistness and flavor that make it one of the best choices for the mesquite grill.
Sablefish has a smooth-skinned, cod-like appearance and is sometimes called black cod. It is found in the deep waters of the North Pacific from California to Alaska. The high oil content of its flesh produces a soft and flaky texture, with a buttery rich though mild flavor. Considered a delicacy in Japan (to where it is exported), it is primarily enjoyed by guests in our Northern California restaurants.
