Belon Oysters are Back

The Westcott Bay European Flat, or “Belon”, oyster is back in The Fish Market restaurants. This distinctive species (Ostrea edulis), which is native to France, Holland and the British Isles, has been successfully grown in Westcott Bay for years and has been a featured oyster of The Fish Market and favorite of guests alike. The flat shell’s deep cup produces a firm textured oyster, faintly sweet and with a unique minerally finish that is prized by oyster aficionados worldwide.
We flew by seaplane up to Westcott Bay this week and met with Craig, Mark, Kathleen and the rest of the Westcott Bay Sea Farms team to, among other things, sample the first-of-the season Belons. Getting there is half the fun, since Westcott Bay is located on the Northern shoreline of San Juan Island, just south of the Canadian border, separated by the cold, pristine water of the Haro Strait.
Our association with Westcott Bay goes back almost 30 years, and we’re proud to feature this fine oyster to guests of The Fish Market when available.
